Kelly Morgan's Homemade Fishcake Recipe

Kelly Morgan’s Homemade Fishcake recipe 

2kgs fresh cooked potato, roughly mashed with butter 
2kgs poached white fish fillets (we use mackerel) 
2 large onions finely chopped 
6 eggs 
1 cup of breadcrumbs
Fresh Parsley and Dill, roughly chopped 
Salt and onion salt for seasoning

Mix all ingredients together well 
Scoop out balls of mixture into a ¾ cup measure 
Mould into shape and coat in breadcrumbs 
Refrigerate to firm and balls and shape before cooking 
Deep or shallow fry until golden brown
