Can you share a happy fish and chip memory?
My happiest memory is buying the shop. I used to go there to buy my lunch and then I heard it was for sale. Although I was a computer engineer, I was keen to buy a business. So I spoke to the owner, we made a decision and in November 2005, my wife Samar Ghumrawi and I became its new owners.

Where have you eaten the best fish and chips?
After us, I think the best fish and chips are at the Bay Fish Shop, Glenelg, and Soto’s Fish Shop at Semaphore – both competitors of ours.

In your business, what do you consider to be the best fish to use for fish and chips?
One of our best sellers is garfish. We also sell whiting, flake and hake.
We introduced Barramundi last year and it is really popular too. Our customers, older clientele, tend to really like garfish. It’s a good tasty fish at a good price and it accounts for 90 per cent of our sales.

And how do customers enjoy it?
They tend to like it battered with chips or our homemade potato fritters.

Do you have a personal favorite?
My favourite is King George Whiting, grilled with lemon, pepper and salt. It tastes amazing, is easy to eat, with just a hint of the sea.

What Australian wine (or other beverage) would you match with your fish and chips? A lot of customers tend to enjoy an iced tea with their meal. It’s not too acidic and has a nice flavour.

How long have you been making/serving fish and chips?
I’ve been making fish and chips since 2005.

What value would winning the award have for you?
It means so much, personally and commercially. We work very hard and take a lot of pride in our work, so it means so much. From a business point of view, the publicity from the win would be amazing.

Do you think it can help to promote the consumption of seafood in Australia?
Yes, it’s been great. People have been talking about fish and chips since the voting opened in April. The awards help to promote Australian seafood.
